Free from preservatives

“An important element of our Ölz quality guarantee is avoiding the use of preservatives wherever possible. The concept of clean room technology allows us to produce all Ölz sandwich and toasting broads without the use of any preservatives” explain Managing Director and co-owner Bernhard Ölz.


Clean room technology uses a specially developed filter system to ensure an exceptionally clean atmosphere is achieved within the room. The air is replaced about 110 times every hour, making the environment similar to that of an operating theatre in a hospital. Since 2015 we have also been producing small yeast dough products under clean room conditions. This includes the Ölz Milch Brötle and Ölz Schulmaus products.

Use of natural dyes

Where dyes are used at Ölz, we aim to use only natural ones. Azo dyes and titanium dioxide (whitening agents) are not used in our products.

The potentially carcinogenic azo dyes are synthetic dyes which are often used in food production to colour products.

RSPO membership since 2014

As part of our internal working group for sustainability, Ölz der Meisterbäcker has been dealing with the issue of palm oil for several years already. The majority of fats used by Ölz, more than 80% in fact, are liquid vegetable oils (rapeseed, sunflower, etc.) as well as butter.

We use palm oil only where no alternative is available for our production processes. Palm oil is a naturally hardening fat and is free from harmful trans-fatty acids. The palm fats we use are gently refined and therefore have a very low 3 MCPD fatty acid ester content. There is not currently a legal maximum value for this content. However, the EU is currently working on introducing this, which we welcome.

Since 2014, Ölz has been a member of the RSPO (Roundtable on Sustainable Palm Oil). Ölz uses only RSPO certified palm oil. 98% of the palm fats used today are certified as “segregated” (SG), the rest is “mass balanced” (MB).

As categorised by the WWF, palm oil is not fundamentally a “bad” oil. Using comparatively little land, a large part of the global demand for vegetable oils can be met. However, palm oil production must be done in a way that is ecologically, economically and socially acceptable. A minimum standard in this regard for producing palm oil is provided by the RSPO.
